apple blueberry cupcakes
The perfect breakfast cupcake
- 3 eggs
- 0,33 cups sugar
- 0,5 cups greek yogurt
- 0,25 cups unsweetened applesauce
- 2 tbsp honey
- 1 tsp vanilla
- 2 tbsp lemon zest
- 0,25 cups lemon juice
- 1,5 cups whole wheat flour
- 1 tsp baking soda
- 0,5 tsp baking powder
- salt (to taste)
- 1 cup blueberries
Preheat your oven at 350°F/180°C.
Mix the eggs and sugar in a mixing bowl.
Mix the Greek yogurt, applesauce, honey, vanilla extract, lemon zest and lemon juice into the egg and sugar mixture.
Mix thoroughly.
Mix the whole wheat flour, baking soda, baking powder and salt into the mixture.
Mix thoroughly.
Mix the blueberries into the dough.
Divide the cupcake dough in the baking tin.
Bake at 350°F or 180°C for 20-25 minutes.
