apple blueberry cupcakes
 
	
The perfect breakfast cupcake
- 3 eggs
- 0,33 cups sugar
- 0,5 cups greek yogurt
- 0,25 cups unsweetened applesauce
- 2 tbsp honey
- 1 tsp vanilla
- 2 tbsp lemon zest
- 0,25 cups lemon juice
- 1,5 cups whole wheat flour
- 1 tsp baking soda
- 0,5 tsp baking powder
- salt (to taste)
- 1 cup blueberries
- Preheat your oven at 350°F/180°C. 
- Mix the eggs and sugar in a mixing bowl. 
- Mix the Greek yogurt, applesauce, honey, vanilla extract, lemon zest and lemon juice into the egg and sugar mixture. 
- Mix thoroughly. 
- Mix the whole wheat flour, baking soda, baking powder and salt into the mixture. 
- Mix thoroughly. 
- Mix the blueberries into the dough. 
- Divide the cupcake dough in the baking tin.
